      <image:caption>Når kagen har sat sig, befries den forsigtigt fra formen, gerne med hjælp fra en kniv eller pallet, der forsigtigt holdes ind mod kagen, så det yderste lag af moussen ikke bliver revet med af. Her har jeg pyntet med Geranium, som er en meget parfumeret blomst, der giver et godt spil til bærerne. På 12 personerskagen herunder, har jeg brugt både blomster og blade fra syre, som er en nem plante at have derhjemme i vindueskarmen, på altanen eller i haven. Den er nøjsom, og kan bruges både i de søde og salte køkken. Har man ikke nogle blomster, så pynt med bær i forskellige i former. Det kunne fx være at skære jordbær på et mandolinjern og ligge dem i en spiral på kagen.</image:caption>

      <image:caption>Tænd ovnen på 180 grader varmluft De tørre ingredienser blendes sammen til en ensartet mel . De tørre ingredienser røres nu godt sammen med de våde ingredienser, og hældes i en smurt springform. Sæt dejen i ovnen, og bag den i cirka 20 min. Tjek herefter om bunden er færdig ved at stikke spidsen af en kniv ned i midten, og kommer den ren op, er bundene færdige. Laver du kagen til 12 personer, skal bunden bage i cirka 30 minutter. Lad nu bunden køle af til stuetemperatur, enten i køleskab eller i et svalt vindue.</image:caption>

Har du ikke en kagering, brug da siden af springformen. Fordel nu bærmoussen over bunden, og bank den forsigtigt glat mod køkkenbordet, oven på et viskestykke. Bring bærerne, sukker, vanilje og citronsaft i kog, og lad det simre i ca. 5-10 minutter, afhængig af hvilke bær der bruges, til bærerne er kogt ud. Jordbær og hindbær 5 minutter, ribs og solbær ca. 7 min, stikkelsbær og brombær 10 minutter. Tag gryden af varmen, vrid husblas fri for vand, og rør den ud i den varme bærmasse. Blend massen, og si kernerne fra. Lad puréen køle af til ca. 30 grader (Håndvarm).</image:caption>

      <image:caption>Det er ikke første gang jeg skriver en opskrift på sirup her på siden, og det bliver nok heller ikke den sidste. For sirup er et fantastisk produkt! En af de helt store fordele er, at det koncentrerer smagen, så man ikke behøver store mængder for at få smagen frem. Det betyder meget for mig, da jeg har prøvet at drukne i flasker alle vegne med hyldeblomssaft, hyldebærsaft, rosensaft, rabarbersaft osv… Jeg har simplethen ikke plads! Så derfor begyndte jeg på at lave sirup, og det viste sig at have mange andre fordele, end bare at fylde mindre. Sirup kan nemlig buges fra alt til lemonader, kager, og i vin, til at marinere kød i, og give salaten et frisk pust.</image:caption>

      <image:caption>300 gram rosenblade. 1 kg sukker 1,8dl vand Saften fra 1,5 citron, eller 2 små 300 gram er mange blade, man bliver hurtigt overrasket over hvor mange der skal til. Når de er plukket, så stil dem gerne udenfor natten over, eller vend dem ud på havebordet og lad dem ligge i 10 minutter. Der er nemlig rigtig mange dyr som ynder at bo på planten, som fx edderkopper og ørntviste, og de kravler gerne væk af sig selv hvis du giver dem lov, og du får dine blade for dig selv.</image:caption>
